Menu Plan Monday~

This weekend has been pretty restful. Saturday we drove to Stroud (midway) to meet and pick up the kids from their Tulsa trip. They had a great time, Emelia was hyper! She had fun shopping for her birthday (belated) and brought home lots and lots of new clothes. Bailey came home proud of himself for eating what everyone else ate rather than having his special food (he is a semi-vegetarian and very very particular). Izzy is feeling better. She was a tiny bit cranky today but it might be the antibiotics that they gave her to take for the next week or so. Her mouth looks like it is healing nicely. Sunday evening we went to an elders/deacons banquet at church and had bbq. It was really good and nice fellowship. I didn’t make the pork chops & potatoes last Thursday, I’m excited to try this recipe… it sounds really good. I have now bookmarked several other new recipes that I need to print and get on the system that I implemented last week.

Slow Cooking Thursday ~ garlic chicken spaghetti

Garlic Chicken
Spaghetti
chicken breasts (I use frozen
boneless skinless)
several cloves of
garlic
salt
italian spices (tone’s spicy
spaghetti seasoning)
ragu roasted garlic spaghetti
sauce
whole wheat pasta (I use
linguini)
olive oil
fresh parmesan cheese
I lay the chicken breasts in the bottom of my crockpot, add a few pinches of kosher salt, press several cloves of garlic, then add a spice called spice for spaghetti that I buy in a big container at Sams wholesale club (you could use basil and oregano and a little red pepper flakes too though), pour the sauce over the top… I use one jar for just us and two if we have guests. I let this cook on low all day and then prepare the whole wheat pasta, drain it and put a drizzle of olive oil and a clove of garlic pressed into it and stirred while hot, I serve the chicken over the garlic pasta with freshly grated parmesan cheese over the top. This is a really good and healthy recipe! I have been making it for several years and it is always a hit.

Slow Cooking Thursday ~ roast with gravy

Roast with gravy…

1 rump roast
1 can golden mushroom soup
1 package dry onion soup mix
1 onion sliced

Slice onions, lay in bottom of crock pot, put roast on top, cover with dry soup mix and then add canned soup. You can add mushrooms if you like them.

Cook all day on low and serve with potatoes or rice… makes delicious gravy.

Mexican soup… or hominy chili…

1 can each yellow and white hominy (corn if you don’t like hominy)
1 can or leftover black beans
1 can rotel (I use mild)
1 can stewed tomatoes
2-3 boneless skinless chicken breasts
1 package ranch dressing (dry)
1 package taco seasoning
1 can chicken broth

Mix all together and cook 6-8 hours on low. Great with cornbread!
Some fix this with ground beef, some on the stove top … very yummy and easy!
