It’s that time again… time to think about feeding the family for another week! I went grocery shopping today even though I really wanted to be napping with Matt. I took Emelia to a friend’s house and was pretty close to the store… and with gas prices felt like I should go ahead and get it done.

So… here’s what I’m thinking:

Monday I am going to cook some small red beans during the day, I have to take Isabelle to Bear so we’ll be gone most of the day. Matt’s been wanting beans for a few days so I aim to please :) . We’ll have some fresh yellow squash from daddy’s garden and some salad.

Tuesday I’ll make some chili, use the leftover beans. I bought some chili cheese fritos which I heart with chili. (cheese too!)

Wednesday we’ll grill up some franks, and finish off that chili on top! Served with some grilled yellow squash and salad.

Thursday I’m making this yummy quiche. I haven’t made it in a long time and it’s yummy. It makes enough to freeze one quiche for another day. Usually it’s so good we just save it for the next night but we’ll see!

I imagine we’ll eat something like pizza or gyros carry out on Friday. Unless we have leftovers… either way the cook gets a break!

With Bailey and Emelia at camp all last week… and Amanda working and out with Lorenzo, meal planning is different… and easy!
This week things will be more normal. We had a great Sunday. After church we ate leftover Chinese food and then napped for a long time! We planted the hostas that Matt’s mom brought down Saturday and worked outside for a while and then I ran the kids to Blockbuster. Bailey rearranged his room today. He also unloaded his suitcases from camp and I will spend the majority of my Monday doing laundry! We have our anniversary this week too!

Monday I plan to order the one topping large pizzas from Mazzios for $6 (monday special)…
Tuesday is our 19th Anniversary! I am not sure if we will go out this night, or if we’ll wait until the weekend. It will depend on Matt’s schedule. If we stay home I may grill some steak or something.
Wednesday I’ll put some chicken in the crockpot for an easy meal before church. *Happy Birthday Darla*
Thursday baked bbq chicken…
Friday either date night or carry out something?

My goals for the week are to help Amanda with a couple of projects in her room… get a new area rug for Bailey’s room… and start unloading and reorganizing Emelia’s room. I hope to paint it. Also need to empty out the pantry and reorganize it. I should have a few days before I get more CAD’s to do. (CAD’s btw are drawings of oil wells that I make into computer images on the computer for a spill plan.)

The kids left for camp this morning. It is so quiet around here. Amanda has spent the day with Lorenzo… eating lunch out and then shopping until church tonight. They are at a movie now. Izzy is already asleep so it’s just me and Matt. The weekend was good. Saturday was crazy busy getting them all packed up and ready for camp. We hit Walmart Friday night to get all the things they needed wanted. They both had things like a flashlight, bug spray, blah blah blah… but then we needed to find special little toothpastes and axe for Bailey. Travel sized everything and a new toothbrush with a holder (as if they’ll use it!)… Then it got really fun. They needed a notebook so they both found really fun ones and packs of pens and pencils. Emelia decided she needed a cute pink hat and new underwear because the new ones I bought a few weeks ago are too big. Then she found some walking shorts she needed, a few more t-shirts, new flip flops, and a watch. Bailey found new boxers that say x-box on them, snacks to pack like peanut butter crackers because he doesn’t eat anything and is concerned he’ll be hungry. I actually called the cook at the camp last year to ask if I could send at least pb&j for him when there wasn’t a vegetarian alternative, she assured me they keep pb&j for the picky kids. That would definitely be Bailey.

My menu for the week will be easy with two eaters gone! Well, maybe not with the biggest eater still home…

Monday… tequila lime turkey breast (bought in marinade at Sam’s) grilled with veggies and salad

Tuesday… Matt’s B-day!!! So his choice!

Wednesday … grilled bbq chicken breasts, baked pot., veggies

Thursday… chicken salad on ww toast with chips

Friday… pizza delivery

Kids coming home Saturday!

It’s been a great weekend… really it has. Friday I took Izzy to Bear, Emelia talked me into a stop off at Penn Square Mall on our way home. She said she hadn’t been to the mall in a long time. Probably a whole week! I wanted to get Amanda a surprise for another round of all A’s. She said her chemistry teacher said she made the only 100 on her final exam in his 3 chemistry classes. She was out of the cologne she likes to wear from Hollister so we got that and then Emelia got lots of earrings and stuff at Icing. I ran in NY and Co. and found a few shirts on sale and we left.

Friday night we went to my brother’s daughter Sarai’s graduation. I enjoyed sitting between my mom and dad with both brothers there on the same row. Bailey spent the weekend at a friend’s house out of town. He came home Saturday afternoon covered (head to toe) in poison ivy. Poor guy. It’s even on his face. We may try to find a after hours clinic tomorrow to see about getting a shot or something. Matt and I headed to Lowe’s Saturday morning. We got plants and flowers and ferns… it was a fun outing. We came home and worked in the yard all afternoon and then headed down to mom & dad’s house for Sarai’s graduation party.

Today we went to church… taught our classes together because the sr. high teachers were gone today too. We came home and sent Amanda and Lorenzo out to get us all Subway for lunch and then me and Bailey went running around trying to find Wii fit. No luck. It was sold out everywhere. Emelia was gone with the children’s church group to see a movie all afternoon. It was so quiet I was able to sneak in a nap with Izzy. I actually slept through evening church services! Matt sat through almost two chick flicks tonight. P.S. I love you and 27 Dresses. He headed to bed half way into the second movie. I did enjoy P.S. I love you.

We don’t have any big plans for Memorial Day. I imagine we’ll work in the yard a little more and I’m hoping to work in a trip to the mall. I still have a gift card or two and some money earmarked for Mother’s Day (from Matt) … It’s funner to shop now that I’ve lost a few pounds (25 actually).

I am starting to get tired of my standard meal … the grilled chicken and salad we’ve been having, but I will probably have it several times again. We’ve eaten out every meal this weekend. Seriously. Friday night we had gyros (well I had a black olive pizza (or one slice of a black olive pizza) because meat is gross right now to me); Saturday breakfast Amanda went to Braums and got carryout. They got the order all wrong so I skipped breakfast. Saturday lunch was Sonic. I had half a bacon burger. Saturday night was dinner at mom’s (the grad. party) … grilled burgers and lots of yummy desserts! Sunday I had the standard cinnamon rolls for breakfast, Subway for lunch and quick sandwiches (black forest ham on toasted wheat bread with baby swiss cheese and mayo) for a super late dinner because of my super long nap!

Monday night we’ll have grilled chicken, salad with shaved parm cheese and fresh veggies…

Tuesday will be chicken burritos.

  • 2 skinless, boneless chicken breast halves
  • 1 (4 ounce) can tomato sauce
  • 1/4 cup salsa
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 teaspoon ground cumin
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • hot sauce to taste

This is a delicious and easy burrito/taco filling—it freezes well, too! I serve this with tortillas, shredded Cheddar cheese and little sour cream. You can also assemble the burritos and put them in a baking dish, cover with salsa and cheese, and bake for about 10 minutes.

Wednesday grilled chicken and salad again…

Thursday Steak & baked potatoes.

Friday splurge … fettuccine alfredo with grilled chicken and fresh broccoli (YUM!)

I have this weird way of getting hooked on a particular meal or certain food and then eating it every meal until I am sick of it and never want it again. Right now the meal of choice is: A grilled chicken breast, salad with butter lettuce and fresh parm cheese, honey mustard vinaigrette dressing, and fresh green beans microwaved for a few minutes. I plan to have this meal every night this week or until I decide it doesn’t taste good anymore. It is also healthy and fits in my diet plan! So, it’s a win-win situation :) … Matt objected to having it a few meals this weekend so I mixed it up a bit. I will make other things for the rest of the crew if needed.

This week is full of graduating seniors. Tomorrow is the CHS graduation. Amanda is ushering and my nephew Chance is graduating. Today Amanda’s boyfriend’s sister graduated… yesterday my forever friend Melody’s daughter Megan graduated… and Friday night my niece Sarai and Amanda’s friend Melissa are graduating from HHS. Pretty exciting stuff. It will be Amanda’s turn next year! I can hardly imagine her graduating. Time flies!

I’m still doing really well on the “diet.”  I can actually tell by my clothes now that I have lost weight.  When you are over six feet tall it takes more than five pounds to show … which is an advantage in some regards I guess.  I wore a suit to church yesterday I bought for Easter Sunday.  I actually bought two outfits, one that was really too tight… being optimistic and then one that was more comfortable.  I wore the comfortable one.  But yesterday was able to wear the one that was too tight and it wasn’t.   I always come to church after class with Iz.  I walked in to sit with Matt and Amanda was sitting with Lorenzo, she called me over to tell me I looked nice.  Then Matt told me I looked like a million bucks.  He doesn’t always notice my clothing, so it was a nice compliment.  We had a laugh driving home when he asked how much weight I had lost, he went on to tell me my >>>rear end<<< looked smaller and said I must have lost it all there!  I LOL’d.   Hopefully it will keep coming off and I’ll be ready for Summer!

We drove to Harrah for gyros after church.  I always take all the meat off mine except for one little piece and Matt piles it all on his.  I think of Jack Sprat when this happens :) …  For dinner I threw in some baked potatoes while I went to church and then came home and made everyone else burgers.  I love baked potatoes!  Especially the yukon gold potatoes, they are so buttery.

Tonight I plan to make Amanda’s favorite, fettuccine alfredo.    Not exactly on my diet, but it’s yummy so I’ll just have a little.

Tuesday we’ll have chicken spaghetti in the crockpot with garlic bread, salad and veggies.

Wednesday … subs

Thursday we’ll have tacos…

and Friday we’ll most likely order pizza in.

I’m going to have to hit the store today before I make anything :)

I’m like completely addicted to butter lettuce.

So…salad will be a part of each meal!

Monday I would do the $6 large one topping pizzas at Mazzios… but I’m so over pizza right now!

(I may do it anyway and just eat a salad :) )

We had pizza a few times this weekend… blech!

Tuesday I’ll make a crockpot meatloaf and have baked potatoes & salad!

Wednesday night is church, they are having a sweetheart spaghetti supper to benefit the youth camp this summer. No cooking for me (yea)!

Thursday is Valentines day!!!

I’m going to make steak, potatoes and salad.. along with these!

Friday I hope we go out … but if not we’ll probably grab some subway.

I made a ham today with pineapples (I don’t like fruit, but ham is better this way) and brown sugar glaze. So, we had ham after church, baked potatoes and whole wheat rolls. It was yummy! So tonight I’m going to soak some beans (either pinto or black… not sure yet) and then cook them all day tomorrow in the slow cooker with leftover ham. I’ll make some cornbread and a salad tomorrow night. Tuesday we’ll have chili with the leftover beans and I’ll have fritos on hand for frito chili pie… Amanda loves that! AND Wednesday we’ll have fat free beef kosher weiners on ww buns and leftover chili with pretzels on the side. Thursday we’ll have spaghetti with ww pasta and ww garlic toast with salad and Friday some steak with potatoes salad and ww rolls… Sounds like a plan. So, what are you having for supper?

I’m so excited to be posting a menu plan monday today.
I actually restocked the fridge last night and copied off some recipes while spending time at mom’s this weekend. YEA!
Today I’m making chicken taco quiche. It is a recipe that makes two quiches so you can freeze one.
I’m also making a beef spiral bake that is for two dishes to freeze one and a spinach alfredo pizza recipe later in the week.
I’m sick of eating out! I am looking forward to a week of cooking, cleaning, shopping and doing lots of laundry. I’m even enjoying doing laudry, go figure!
I’ll try to post the recipes later… I’m off to bathe izzy now.

Well, better late than never huh? Maybe not. I spent the entire day (well… most of the day) cleaning and organizing Emelia’s bedroom! Oh my goodness! She has so much stuff! I started just throwing things away about hour five. She never really asks for toys, she’s never really played with her toys much which is maybe why there are so many new looking things in her room. I am so glad to have that done. Amanda helped a little. (Remember she’s working off her ticket … found out it is $103.00) I intentionally finished before Emelia came home from school. It’s just easier that way.

Tonight I fixed Matt and the girls steaks and I had a slice of leftover roast from yesterday on a slice of french bread with a little mayo… fresh veggies on the side with ranch. It was yummy. We had a few cookies left that Matt took care of and some chocolate chip ice cream. I shared mine with Izzy.

Tomorrow I plan to throw something in the crockpot. Probably chicken spaghetti. It’s easy and good. The cooler weather makes slow cooking very appealing. We’ll have broccoli and some garlic toast.

Wednesday is trunk or treat at church. I will fix us a grilled cheese sandwich and some tomato soup for a quick meal before we go. I need to run to the store and get some cheerful decorations for the back of my suburban. Any ideas?

Thursday will be November 1! I can’t hardly believe it is almost November… then almost December! I have not bought ONE present yet! I’m not stressing though. Not much is planned for Thursday, Emelia has basketball practice. I may make a big pot of beans with ham some corn bread.

Friday I may take Matt on a date. We made a plan to alternate planning a date each month. In October Matt took me for Panera bread and a walk through the park… complete with Duck feeding! I am not sure where to take him. Again, any ideas?

Tomorrow is time travel Tuesday! Since it is so close to Halloween, lets travel back to our most memorable Halloween. Did you dress up and go door to door growing up? What was your favorite costume? I’ll put Mr. Linky up later tonight so come and link up and share!
