Not much to report and since I’ve spent three of the past four afternoons running to OKC to get work stuff done, and then most free time working on work stuff it’s been tough to concentrate on fun computer stuff. These are the times I appreciate facebook. It is quick and easy! After the post I wrote a week or two ago about the reason I wanted to blog I decided to write some things to remember…

Izzy has had a good week. She’s had good days at school. Today Melanie reported that she did good making choices and looking at her work. They were using a bubble machine to encourage her to keep her head up and then realized she didn’t like the bubbles so they reversed it and turned it off if she held her head up which she did for a long time to keep the bubbles away! She smelled like grape bubbles when I picked her up. I think she and Camilla were covered in them!

Amanda is obsessed concentrating on prom. We’ve been looking at dresses with no luck so far.  I am not concerned, we still have three weeks to find the perfect dress. 

Matt and I have been walking daily at the park.  Tonight we decided to grab gyros to go and take them to the park to eat before walking.  I didn’t think about the fact that it was 54 degrees outside and misty.  It was okay though, we ate really fast and then walked even faster to warm up.  We walked about an hour or so.  My foot is better, but still not run-ready! 

My dad’s brother Bill is in ICU tonight.  He has a tumor in his brain… He needs prayers.

I got as far as the title last night and that was about it!  This week has been full… Monday I had an appointment in the city with my friend Jacki and her son (and the owner of the spill plan co. I have been doing work for)… we met and then ate on the canal in bricktown.  That water is gross.  The food at the Bourbon Cafe wasn’t too great either.  But, served as a good weight loss product… since I didn’t eat much of it 🙂 .  I “raced” home and reheated the pork roast I made Sunday for bbq sandwiches.  

Tuesday I was finally able to go to lunch with my forever friend Melody.  I haven’t seen her in a while (since I highlighted her hair last) and  she had a whole list of places that she wanted to go to in the city.  So, we tried a place I was skeptical about.  It was wonderful.  I wouldn’t mind having that right now!  I had bbq brisket, mac and cheese, and corn bread.  That was the best mac & cheese I think I’ve ever had so it pretty much cancelled out the light eating from Monday.  We stopped on the way back to her office at a cute little cupcake place.  We each bought one cupcake to go.  I got one called ebony & ivory.  It was chocolate cake with white icing.  I ate one bite and gave it to Emelia.  It was tasty though.  Melody said she ate all of hers.  We both tasted a coffee flavor but it was subtle and didn’t taste bad (neither of us are coffee lovers).  After picking Izzy up and getting her fed I left for FLO.  I don’t know about you, but this time change has messed with me.  I was tired and maybe even a little cranky.  I enjoyed FLO as usual though! 

Wednesday I had plans to eat lunch and have a planning meeting with Isabelle’s teacher, Melanie.  We went to the golf course and had soup and sandwich (well, she had Greek salad).  I was surprised at how good it was.  Funny how close it is to me and I never knew they had anything but maybe burgers…  We were able to sit and talk for a while.  She has great goals for Iz and I am happy with the plans for her.  It is so great to have supportive, positive people who not only expect great things, but think out of the box to help those things happen.  I showed a pic of little N with Iz the other day.  N is a special little boy and Melanie shared his story with me yesterday.  I had heard parts of it, but not all of it.   I would love to share that story with you all sometime (I’ll check to make sure it’s ok first …)  It is truly a story of how God led this Cambodia born child to his family. 

In the evening I had a meeting with some people with the spill plan co. and was out until 9:30.  Too late!  It was such a busy afternoon/evening I realized when I got into bed that I hadn’t eaten dinner.  I thought about having a bowl of cereal but decided to skip it and just sleep! 

Cold and rainy here today!  Perfect weather to just stay in bed and sleep all day.  NO chance 🙂 … gotta get busy, tomorrow is Emelia’s birthday.  She is having a sleepover and we’ll be going to eat and see a movie.  I haven’t even shopped for her although it will be really easy because I know exactly what to get.  My plan is to go do that today while Izzy is at school. 

I was cleaning my laptop yesterday… just with a lightly dampened cloth.  After I finished half of the keys on the keyboard stopped working including space and enter!  ugh.  I took it apart and checked to see if the keyboard was somehow unhooked, but it wasn’t.  So I will be ordering a replacement keyboard and hope that fixes it.  For now I have a USB keyboard connected.  What a pain, but it could be worse and at least I can still use my computer.

I just realized I hadn’t done much “blogging” in several days…  There are several reasons.  First, any computer time I’ve had over the last several days has been spent working on tier II chemical reports for the company I have worked for.  I knowknew nothing about any of this stuff before Friday… but am quickly becoming knowledgeable.  It’s harder to spend time for leisure on the laptop when you have work to do.  I am not finished… not even close, but I am taking a breather and breaking to blog. 

The next reason was that we had visitors over the weekend.  Matt’s mom Paula, aunt Jane Ellen and sister Jane Ann came for a visit.  Friday night we had pizza (tradition) and vanilla ice cream with chocolate syrup.  The problem was the bottle of chocolate syrup I thought was full was completely empty!  So, rather than face yet another trip to the store… I made some.  It was better than the store bought stuff… and pretty easy.  Here’s the recipe.

  • 1/2 cup packed cocoa powder 
  • 1 cup water 
  • 2 cups sugar 
  • 1/8 teaspoon salt 
  • 1/4 teaspoon vanilla extract 


  1. Whisk cocoa powder and water together thoroughly in a large saucepan.
  2. Heat and whisk to dissolve the cocoa. (I use medium-low heat).
  3. Add the sugar and stir/whisk to dissolve. Be sure the sugar has dissolved before continuing on, so your syrup is not grainy.
  4. Bring to a boil and boil for 3 minutes. Be sure to watch this VERY carefully. Mine has a tendency to want to boil over immediately, so I have to continuously take it on and off of the burner.
  5. Remove from heat and stir in salt and vanilla extract.
  6. Let cool completely and skim off any skin that may have formed.

Saturday Paula’s husband John came down (from Tulsa) and brought some yummy lasagna he made.  He is so sweet to make lunch  for us on Saturday!  I made garlic bread and we had salad.  They all played gin rummy & uno for what seemed like hours!  It was a good visit. 

After I trimmed and colored Jane Ann’s hair we all headed to Poblano Grill for some delicious mexican food.  She headed home to Dallas from there. 

Sunday was church, nap and church again… 

Today I went to lunch with my parents at Sante Fe.  It was pretty good!  We did a little shopping and then came home to do mom’s hair before I picked Izzy up from school.  whew!  Busy day! 

I don’t have a mpm.  Hopefully tomorrow.

Whew. It’s been a long day (or two or three 🙂 )…

Sunday we woke up late. Well, I woke up late. My first thought was to stay home and let matt teach the girls with his boys. Then I got a call telling me I would have the younger class too… so I quickly got it together and went. I was glad that I did. A busy afternoon, a meeting before evening church and a baby shower before bed. I got a text from mom telling me they had a surprise for me. I said what? she texted back “f w”… huh? then “fu wu” … what? finally it came to me! fudgie wudgie! I heart fudgie wudgie. Yum. It was my valentine. I have the best parents. Mom made the cutest valentines for each of the kids with pics of her with them. So cute.

Monday the kids were home for president’s day. Another crazy hectic day! The bright spot was the fudge.

Today I went with mom to the mall after taking Iz to school. We were looking for clothes/accessories for the big golden anniversary. I wore the WRONG shoes. Seriously! They were pretty comfortable Sunday, but they are casual heels I wore because my jeans are extra extra tall length and I hate them to drag on the floor. ick. So, about half way through the mall my feet felt like they were on fire. Walking on the balls of my feet and each step was a major pain! We did Macy’s, Dillards, tons of little stores and ended at JCPenney to leave. I actually got some slip on houseshoe type shoes (kinda mules) and wore them out. My feet still hurt. Even after a foot massage courtesy of Emelia, the foot massage extraordiare. I un-heart those bad mean shoes.

Another drama today was helping amanda mail off some apps for scholarships that had to be postmarked today and she was waiting for letters of recommendation. It all worked out and she got it mailed. It is starting to sink in that she is actually going to college next year. She is considering changing her major to pre-med. We need to find some custom rubber stamps!

Izzy had a pretty good day at school. They were having her do yes and no with signs on her hand socks… and they asked her if she wanted to get on the bike and she told them no more than once so they felt like they had to go with her choice. I suggested they don’t ask her Thursday 🙂 … She was sleepy today and is already in bed asleep.

I finally watched Fireproof. I cried three times. 1st when he put the flowers where the computer had been with the note that said, “i love you more.” ah. So sweet. Next when he apologized at her bedside. and last at the end. Such sweetness. I usually don’t get drawn into sappy stuff like that. I’m like a machine. Just kidding, but this was a great movie. Matt thinks is was more of a “chick flick” than facing the giants. I don’t. I actually liked it better.

I know it’s been a great mystery without my menu posted. It’s probably been driving you crazy right? Last night I made enchiladas, guac, broc, salad, and corn… It was yummy. So good in fact we had a repeat tonight with leftovers! Which means I’m going to have to cook tomorrow. I’m thinking grilled chicken salad.

Okay, I’ll go back to being underwhelmed with AI. And then to bed.

I. Annie P-blahblahblah. Promise to do better in February. So help me God.

  1. I promise to eat healthier, drink more water, and see numbers of lesser amounts when standing on evil scale of meanness and insensitivity rather than climbing numbers of shame.
  2. I promise to walk further than from car to store or from bedroom to front room (although it’s a pretty far walk in there).  I promise to get outside and walk at least four times a week (hey it’s a start) and possibly check into maybe joining the gym.  How’s that for a promise?
  3. I promise to be kinder.  I watch the 17 and counting show and while having 17 or 18 kids is not a goal of mine, the mom is so kind and oozes goodness.  I want to ooze goodness.
  4. I promise to continue reading my bible every. single. day.  It’s important and it has to be a priority.
  5. I promise to spend less time on the computer and more time doing things that while may be considered mundane…. are a huge part of my job description as a homemaker.  It’s not all about me even though I sometimes forget that.
  6. I promise to live a more frugal existence not wasting money on frivolous items or to make sad days happier.  Retail therapy isn’t all it’s cracked up to be.

That’s all the promises I feel capable of making good on for now.  Hopefully there will be more promises.  Any promises you need to make for this fresh clean start of a new month?

I woke up early this morning… not really early, but by seven a.m.  Matt turned the tv on while I tried to go back to sleep.  He was watching 28 days (movie) and I ended up staying awake and watching it.  It was interesting.

After breakfast late and some cleaning I decided to take Bailey and Emelia to the movies.  Just get out for a while… we went to see Mall Cop.  It was really good.  Kevin James did a great job and was such a “nice” guy in this movie.  It was a pretty wholesome movie without nudity, language or blood.  


We didn’t do movie theatre food… no popcorn or anything.  We were all pretty full from lunch at home so no one even thought about it.  But, Emelia did realize that we didn’t eat anything when we were driving away and so we ran through McD’s drive through for a treat!

I don’t know how a trip into the grocery store for 3 things (here’s my list:)

  1. milk
  2. cereal for Iz
  3. coke

can turn into a basket full of stuff!  I ended up with:

  1. coke
  2. onions
  3. baby carrots
  4. avocados
  5. cereal for iz
  6. butter
  7. milk
  8. fudgesickles (80 cal)
  9. cups
  10. milk
  11. cinnamon rolls for breakfast tomorrow
  12. tortilla chips
  13. ivory soap

Now I’m sitting here, alone in my room because Matt is watching UFC on tv…. I hate those shows.  I am remembering I didn’t buy ketchup.  A necessity here.  I’m wondering what all I will buy in my quest for a simple bottle of ketchup?  Anyone else have this problem… seeing everything you “need” everytime you run in for a couple of things?

Wow.  That was random and boring huh? I need to get a micro sd card too.

I’m watching “whatever, martha” on the fine living channel (fln).  I have seen it advertised and wondered if Martha’s daughter Alexis was being mean and doing this show “to” martha… but at the opening Martha actually says she gave all these old tapes to her daughter so she could basically make fun of her.  They are making fun of everything she does.  It’s kind of sad.  I don’t think I like this show and/or will probably never watch again.  As a matter of fact, I’m changing the channel.  (I’d never make fun of you on television mom!)

Speaking of mom..  Here’s a cute pic of her with my neice Candace’s little baby girl.  She’s so cute 🙂 … (both mom and gabby I mean.)


Tonight I made homemade pizzas and a big batch of matt’s veggie/volumetric burgers.  He helped me cook both these things the last time I made them and while I enjoy spending time together I realized tonight while cooking “solo” how much cleaner and faster and more efficiently I work alone.  I guess it works out either way.  I welcome the company and time together, but also enjoy just getting it done!

That’s all I have for tonight.  I need to make my daily bible reading bookmarks for the girl’s class tomorrow…

Techinically I’m not iced in… but, the kids are out of school again today!  I am thinking they will have school tomorrow because it appears to be melting a lot today. 

It’s been a pretty good day.  I had lunch at Cheesecake Factory.  YUM!  I had baja chicken tacos and brought home cheesecake for dessert.  Izzy loves sharing it with me (and Bailey too).

Tonight is our leadership dinner for church at Chequers.  I like that place.  I also like the thought of not cooking dinner!

I made bean and beef enchiladas last night.  They were SO good!  Amanda made guacamole… we had veggies too.  I cooked lean ground beef with a few cloves of pressed garlic, salt & pepper… added in taco seasoning and a little water.  I spread a little ff refried beans on a large flour tortilla and then the meat mixture.  Rolled them up and put them in a pan.  I first put a little green enchilada sauce in the bottom of the pan and poured the rest over the top.  I grated about half a pound of medium cheddar cheese and covered them with it … baked at 375 for about 45 minutes.  Delish… with black olives, sc, guac, salsa etc. 

Bailey just came and took the remaining cheesecake! I guess I’ll go put izzy in the kid walk and fold some clothes!

p.s. Izzy is doing great with the foot orthotics.  She is sleeping in them without getting upset and her feet are looking better by the day.  Very exciting.

I put Izzy in the kid walk.  Emelia tried enticing her to move her feet by offering a lick of her mint if she did.  I walked in the other room for something and came back to find emelia letting izzy lick her mint (a fresh one).  She said iz had moved her feet.  I did see some moving feet with my own eyes a little later.  She seemed to tolerate it better today.  She did great with her therapy program at home tonight with mom too.

The roads are crazy!  I ran some errands this afternoon and passed car after car stuck on the road.  I was thankful for 4WD today.  What a mess.  It is supposed to melt some tomorrow.  For now school is not in session again tomorrow.  We will have another day at home.

So sweet Judi did my bloggy design.  When she loaded it up comments wouldn’t work. We couldn’t figure out what the problem was!  Tonight she emailed telling me that I hadn’t upgraded my wp files.  So I did.  I loaded the new version onto my ftp.  This is almost all greek to me (like that magazine you sent me Irene from Greece).  Anyway, I could not access my admin panel so I was locked out of my blog.  I looked on google and forums for ways to resolve and was hitting dead end after dead end.  So… I saw on one forum that you could login to your cpanel and with one click upgrade on a fantastico icon.  I did that and got a worse error and my blog was gone.  Yikes!  There was an error about a plug in and line 321 or something so I went back to the ftp and just deleted that plug in.  Voila!!!!   My blog is back and I’m in admin typing this post and I am so relieved.  Seriously! 

I was browsing the taste of home mag that mom has sent me and saw an advertisement page for stove top stuffing and a recipe with chicken.  I knew I had most of the items listed and decided to try it only to find out I had no cream of “” soup.   I decided to improvise.  Here’s what I did…

Amanda mixed up the stove top dressing mix.  (it was supposed to be chicken but mine was turkey)

I sauteed some boneless skinless chicken breasts in a little evoo.

I removed them to chop them into bite sized pieces and put in frozen corn, green beans and baby carrots.

I put the chicken back in and let it all cook covered.

In a new pan I melted butter and added flour… then milk to create a white sauce to replace the soup and sour cream.

Added salt, pepper, garlic salt & onion powder to chicken and veggies and salt & pepper to taste to sauce.

I poured the sauce over the chicken and veggies and then put it in the 9X13 pan.

Spread out the dressing over the top and baked at 375 for about an hour. 

It was delicious.  Really really good! 

I used the leftover mashed potatoes from last night and stirred in a little sour cream and parm cheese and baked them.  Yummy!  We even had hot rolls from last night that mom made.  It was a feast. 

Did you watch “biggest loser?”  I was sad to see *him* (not to spoil it for fellow dvr-ers) go home!  I really liked him.  Oh well.  I hope he continues to do well losing weight.

  1. Did daily bible reading first. 
  2. Posted on Internet Cafe Devotions.
  3. Had ugly incident with kindergarten teacher while dropping Izzy off… had to be nice.  She thought she could tell me I couldn’t stop in the handicapped drop off area.  She’ll learn. 
  4. Put izzy in her kid walk twice. 
  5. Watched Princess try to leave with Emelia on the school bus.  She made it up the bus steps while the kids cheered her on… Emelia brought a sad puppy back in the house.  No school for Princess.
  6. Read a few pages of American History book to Amanda because her eyes were tired. Then my eyes were tired too so I stopped. 
  7. Checked off all the chores on the daily chore list…
  8. Made a quick trip to Walmart.  We have a love/hate relationship.  Got Amanda restocked in smart ones and skinny dippers (for weight watchers… she lost 6.6 pounds last week!)
  9. Made a delicious pot of spaghetti & sauce.  Started with chicken breasts, green peppers, mushrooms, garlic and italian sausage… sauteed in olive oil with italian seasonings and then added jar of prego and large can of petite diced tomatoes.  Added freshly grated parm at the end.  It was delish over ww pasta.
  10. watched American Idol.
  11. Got beat by Gail (again) on fb scramble! ugh 🙂
  12. picked up new books at library to read.  First in line… the face by Angela Hunt. Read it anyone? Uncharted was really good and one of those books that sticks with you after you read it.  I can see why Gail recommended it.
  13. Chatted with Julie on the phone.
