It’s Friday! Emelia just called from her teacher’s cell phone and asked for a sack lunch and I think socks. She was whispering :o)! I handed the phone to matt to see if he could hear what she was asking for. So, I’m off to deliver socks and a lunch and hope that was the request. I am then taking Amanda her gifts she put together for her friends and then left sitting on her dresser. They are cute little gift bags with lipstick, a big candy cane full of m&m’s and some other goodies like pens and pony tail holders. Izzy is having her pre-k holiday party and is taking a gift for another girl. She’s taking a baby doll. It’s supposed to be $2.00 and I bought it at Target and can’t remember the exact price … oh well. Matt is home today through Christmas. He’s outside cutting down trees … well, cutting down the hanging limbs of the fallen trees. It’s crazy out there. Hope you all have a great Friday!

I am so happy my holiday shopping is over! This year didn’t seem to be as hard as previous years and I’m not sure why. I didn’t start shopping until after the Thanksgiving holiday and was a little concerned I had waited too long especially with all the bloggers writing about finishing by Thanksgiving. I think if I finished that early I would be really worried about myself. :o)! I usually don’t use credit cards for Christmas shopping and haven’t had to consider personal loans either. I’m thankful that it all works out every year. Even with the ice storm and lack of power it all worked out. I feel blessed and thank God for those blessings.

But my God shall supply all your need according to his riches in glory by Christ Jesus. (Philippians 4:19)

My God shall give me whatever I need.
If I ask it of Him it shall be guaranteed.

I know He is rich; what I need He’ll provide.
Whatever I want is already supplied.

I just have to ask, and He gives it to me,
There are no strings attached; it’s given for free.

It can’t be too big, too great, or too grand.
God supplies all my needs, just like He planned.

I posted this recipe recently, but it is a great and delicious quick and easy meal!
Nancy mentioned that the egg mixture is a lot! I think you could make three pies instead of two with the ingredients listed. Eat one, freeze two!

2 pie crusts (I used frozen)
2 cups cubed chicken
2 packets of taco seasoning
2/3 c. salsa
2 c. cheddar cheese (I forgot to buy this but had a block of sharp cheddar I grated)
8 eggs
2 c. half and half
2 T butter
1/2 c. sliced olives
4 oz. can chopped green chilis

I sauted my chicken breasts in the butter, covered with the first packet of taco seasoning and added just a little water so it wasn’t dry. I let it cook and cut it into small pieces with my spatula. Mix the eggs with the cream and then stir in the chilis and olives.
Bake the pie crusts 8 minutes and then pat them to flatten them back out.
Put the chicken in the bottom of each pie crust, followed by the cheese, and then 1/3 c. salsa in each and pour the egg mixture over the top.
Bake at 400 for 35 minutes. (I turned it down to 375 and then cooked it for another 10 minutes. Be sure and get the deep shell pie crusts because they are really full.
