I got the cutest Halloween card today from Nancy! Love the stickers and Oklahoma tag :o)!!! Now I’m a double slug :o(. Nancy is one of the funniest and sweetest bloggers I know!

I’m getting ready to go on a ‘date’ for the afternoon with Matt! He has planned it so I’m not sure where we are going, but I’ll let you know later ;o). I am trying so hard to keep my suggestions to myself as I am known to be a bit of a control freak (be quiet Julie!).

I thought Susan wrote such an excellent post on blog awards yesterday. Thank you Susan for articulating my own thoughts too :o)!

I love bloggy awards, it’s just like a big hug from a blog friend.

I got a few while I was away and want to acknowledge them.

Thank you Theresa for the “You lift me up” award!Theresa is a new blog friend and I look forward to getting to know her.

Jenileigh, Carrie, and Karen gave me the Mathetes award.
Mathetes is the Greek word for disciple, and the role of the disciple (per the Great Commission) is to make more disciples.
If you don’t know these three, they are the cream of the crop. Carrie was one of my very first blog friends and she is a sweetie to the core! Karen writes such encouraging posts and is a wonderful author and friend. Jenileigh’s love for God is so evident, I love visiting her.

“We are challenged to find five more people who share the message in their own ways. Winners of this award must pick five other “disciples” to pass it on to. The originator of the award (Dan King of management by God). It’s a blessing to see things such as this floating around the blogosphere.”

Susan-Penless Writer … I have enjoyed our emails and feel like she is a true mentor in Christianity. I WILL meet her, she lives in Oklahoma too!

This is the part of blog awards I don’t like, there are so many more names that come to mind! I’ll stop here, but all the blogs I keep up with are disciples… that is why I keep up with them and love to know them.

favorite ingredient friday ~ chicken pot pie

Chicken Pot Pie

2 Pie Crusts (your own or purchased), unbaked
2 T. Butter
2 T. Flour
½ tsp. salt
¼ tsp. thyme (I used mrs. dash herb and garlic & rosemary too)
¼ tsp. pepper
1 c. chicken broth
¼ c. milk (I used heavy cream)
2 cups chicken, cooked and cubed
1 ½ cups vegetables (I used fresh potatoes and baby carrots, frozen peas)
Dash of minced onion

Preheat oven to 425. Line pie plate with one crust. Melt butter in a large skillet over low heat and stir in flour, salt, thyme, and pepper. Cook until smooth and bubbly. Remove from heat. Stir in milk and broth. Heat to boiling, stirring constantly for one minute. Stir in chicken and veggies. Pout into pie crust. Top with the second pie crust. Seal edges, cut fancy slits for airing. Bake on cookie sheet 30-40 minutes or until crust is golden brown. There was enough filling for two pies to I used phyllo dough, I have a pan for really big muffins, I layed out and buttered the phyllo, cut it in half (about six layers) and then layed it in the muffin tin, put a big spoon of the filling and twisted the top. These were so wonderful!!! Matt liked the regular pie version best, but I thought the phyllo made it more special! and they were pretty too!
