Weekend Reflection #4

Whew… what a week!

I guess I’ll start at the beginning :) Last Sunday we were facing Izzy’s new therapy programme. It is exciting and a little intimidating to start over with a different set of exercises and the cross pattering and assisted crawl honestly seemed daunting to me based on the two hours of crying she displayed when the Australian’s were demonstrating the exercise. Sunday evening she did cry quite a bit but did great on the assisted crawl. She did the full 20 ft. Had a recuperative swing by Matt while I got her dinner ready.

Monday was another great day, horse riding for Izzy. They are great at the horse therapy place. I was even able to grab some broccoli cheese soup in Edmond for Emelia on the way home (it’s her favorite). I brought Amanda some too, she sweetly said, “thank you.” Then Emelia’s bus came home and she saw the Jason’s deli bag on the table and did a celebration dance. I told Amanda that that was a better response :) Izzy did great again on the assisted crawl, crying less…

Wednesday I took Izzy to the dentist. She did really well and even let them xray her little teeth. She will be getting dental work done in a couple of weeks. I’m so ready to get this done and she is too. Wednesday night Izzy did so good on the assisted crawl. She hardly cried and moved her legs more. It was so exciting!

Thursday I got a letter for a luncheon for Amanda’s high school. She is in the national honor society and they are having a lunch in April. She has a 4.0 gpa! Go Amanda! Another good day for Izzy, school and therapy. Bailey also had a great day… he has started track this year (junior high) and is doing pole vaulting. He made it over the wire today and was very excited. I’m so pleased he is enjoying track! Anything to get him away from his wii for a little bit :)

Along with the usual on Friday… therapy and kid transporting… I laid down Friday night to go to sleep and Matt was already sleeping. He rolled over and said, “Annie, can I tell you something?” (I thought oh no, what have I done now :o ) I said, “ok.” He said, “I sure do love you, I can’t say that enough. You are a sweetie.” That’s a nice way to end the week huh?

I am blessed.

Favorite Ingredient Friday ~ Tortilla Soup

I don’t have a written recipe for this soup, but it is so good!!!!
Tortilla Soup…
Chicken (I usually buy frozen fajita meat at Sams or a roasted chicken and pull off and shred the meat.)
large can of chicken broth (40ish ounces)
green chilis, 4 oz.
onion chopped
canola oil
cup of salsa
heaping teaspoon of chili powder & ground cumin
cilantro
cheddar cheese
avocados
corn tortillas
Saute the chicken with onion and green chilis, add in broth, salsa, & spices. Salt to taste. Let simmer …. Bring oil to boil, roll up a few corn tortillas at a time and slice them making strips, fry them in the canola oil until crispy… lightly browned. Take out and salt, set aside… Cut the avocado into chunks.
To serve, place your cooked tortillas in the bottom of the bowl, lay in some avocado chunks, pour soup over and add cheese to the top.
I served this soup to the Australians when they were here in the Summer. They took the recipe home, it is just sooo good. I think making your own tortillas makes the difference.

Name something you thought you had lost, but later found.

I lost my conscience for a while… what? I know weird huh? Well, I turned away from God for a while and just lost myself. I later found God again, and found myself. I love that God loves me.

What are you obsessed with?

Sonic Ice… I can’t get enough of the stuff. I’ve been told that the desire to eat ice is associated with anemia. I just think I like to eat ice :)

What kind of perfume or cologne do you like to wear?

Slow Cooking Thursday ~ garlic brown sugar chicken

I haven’t tried this recipe… It is just one that sounds like it might be worth trying out.

Crockpot Garlic Brown Sugar Chicken
1 to 1-1/2 pounds chicken pieces
1 cup packed brown sugar
2/3 cup vinegar
1/4 cup lemon-line soda
2-3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon pepper (regular black or cayenne)
Place chicken in slow cooker. Mix all remaining ingredients and pour over chicken. Cook on low for 6-8 hours. Serve over rice or noodles.

What I plan to make for this Thursday is plain spaghetti & meatballs in the crockpot which couldn’t be easier!!!

I put in frozen meatballs (from Sam’s) and pour one or two jars of roasted garlic Ragu spaghetti sauce… I press several cloves of garlic and then add my spicy spaghetti spices and some extra red pepper flakes. Close to the end of cooking I add in a little cream and some fresh parmesan cheese.

I cook whole wheat linguine pasta, stir in a dash of olive oil and press a clove of garlic to season and serve the sauce over the linguine. Top with more parm… yum!

I am going to buy a smaller crock pot because I have decided to start preparing Izzy’s meals seperately in another cooker with fresh veggies, some meat and brown rice… They smooth it with some olive oil…

My crock pot is huge and I love it. I have about worn the thing out using it so much but I think whoever invented it should get a big kiss :)
