Slow Cooking Thursday ~ roast with gravy

Roast with gravy…

1 rump roast
1 can golden mushroom soup
1 package dry onion soup mix
1 onion sliced

Slice onions, lay in bottom of crock pot, put roast on top, cover with dry soup mix and then add canned soup. You can add mushrooms if you like them.

Cook all day on low and serve with potatoes or rice… makes delicious gravy.

Another week to plan meals for… they seem to come so quickly!

Monday… Leftover chili from super bowl party on whole wheat tortillas with sour cream & salsa… chips & salsa…

Tuesday… curry chicken (thanks jennifer), rice, brocolli

Wednesday… son’s 13th birthday… Mazzio’s pizza & chocolate cheesecake!

Thursday… spaghetti & meatballs in crockpot with garlic toast & green beans & salad

Friday… pork & green chili casserole

Curry Chicken
1) Cook 1 pound boneless, skinless chicken breast & cute into bite size pieces. (I have baked the chicken earlier in the day and then cubed it or cut it up and then sauteed it before doing step 2.) Set aside.

2) Melt 2 tablespoons of butter in large skillet over medium heat. Cook 1/4 cup of chopped onions, 1 tablespoon of flour, 1 tablespoon of curry powder and 1/2 teaspoon of salt in butter. Stir constantly until bubbly. It will be think like a grainy paste.

3. Remove from heat and stir in 1/2 cup chicken broth and 1/2 cup milk (we use skin).

4. Heat to boiling, stirring constantly for about 1 minute. Add chicken. Cook about 3 minutes while stirring. Serve with white rice.

My girls love it-they call it yellow chicken. For pickier eaters, I would just serve them some of the cooked chicken (before adding the sauce) and rice with the veggie that you are serving.

Strombolli
1 loaf frozen bread dough
2 eggs, seperated
1 TBSP parmesean cheese
1 TBSP parsley
1/2 TBSP garlic powder(I’ll press a few cloves of garlic)
1 TBSP oregano
1/2 TBSP pepper
approximately 2 TBSP olive
1/2 lb cooked Italian sausage OR pepperoni
2 cups mozzarella cheese
1/2 lb mushrooms, sliced (I use 2 small cans)
Oil frozen bread dough and defrost 3-4 hours, per package instructions. Roll out with hands to 1/4 inch thickness. Mix egg yolks, seasonings and spread on dough. Top with meat, mushrooms, and cheese. Roll lengthwise & shape into a horseshoe shape. Place seam side down on a cookie sheet. Brush with egg whites. Bake at 350′ for 30 minutes. Slice into 1″ pieces. Serve with hot pizza sauce or spaghetti sauce.

Pork and Green Chili Casserole
1 lb. pork, cubed (can use chicken)
15 oz. black beans, rinsed and drained
14.5 oz. diced tomatoes, drained
1 can cream of chicken soup
2-4oz. cans chopped green chilies
1 c. quick cook brown rice
1/4 c. water
1 tsp. ground cumin
2-3T. salsa
1/2 c. shredded cheddar

Saute pork in skillet until no pink remains. Add beans, soup, tomatoes, chilies, rice, water, salsa and cumin. Cook and stir until bubbly. Pour into an ungreased 9 x 13 pan. Bake uncovered at 350 for 30 minutes. Sprinkle cheese and let stand

Favorite Ingredient Friday…

Spinach dip is a favorite with my family and extended family. I am always “expected” to bring it to any event… It is styled after the recipe on the knorr vegetable soup package, but I make it a little different & everyone always asks for the recipe:

Annie’s version of spinach dip

8 oz. cream cheese
8 oz. sour cream
8 oz. mayo
1 package knorr veg. soup mix
4 chopped green onions
10 oz. frozen spinach, thawed and drained well

Mix well, and refridgerate for flavors to meld.

I serve in a hawaiian bread, cut out the middle and chop up the peices for dipping.
Crackers also work well… or veggies.

Well, Tefra is supposedly approved as of today. I am now waiting for a nurse to call for a home visit to get the ball rolling and hopefully get Izzy’s teeth fixed.
We made a brace type thing last night and it appears to be working okay. She wore her splints a lot today and was not happy about it but it’s okay.
We had an interesting day… I was so determined to get her to school. I fell walking to the car carrying her. Yep, fell! I didn’t drop her, I don’t even think she knew we fell. I braced myself with my right hand and skinned it a little and my knee. I am praying I don’t wake up sore tomorrow. Anyway, got her to school.. it was snowing heavily… I decided to carry her and push the stroller. The basket underneath came undone and the foot splints fell into the snow. After picking them up twice while carrying Izzy and pushing the stroller I got to the doors to find that the basket had wound itself around the front wheel keeping it from pushing… UGH! To top it all off I busted my nail of all the way at the bottom. The good news is that when I picked Izzy up from school they said she did really good today in the walkable.

Thirteen things on my mind..

1. Izzy’s dr. appt. today. It was a consultation for botox injections. He has ordered other tests on her hips and I am just trying to stay strong, upbeat, and know God can heal anything. I have had several moments today where I felt I could burst into tears, but kept myself in check…

2. Australians are coming in February. I have things to do to prepare for them and make sure money is appropriated for this. I need to plan a trip to Ponca City to help get ready for their arrival if the weather permits.

3. Speaking of Ponca… I need to get more hbot for Iz. There have been so many reasons to keep us away from bad weather to dying grandmothers… I know it is beneficial and really want to make it back up there soon.

4. I am still working on approval for Tefra. I spent time on the phone with the clinical psychologist yesterday to do the third round of tests, hopefully this is the one that will satisfy the hca and we can move forward… which brings me to…

5. Izzy’s teeth are worse everyday! I am so ready to get them fixed and move on. I am hoping that it all goes smoothly and that she comes through it well.

6. I have to try to create some kind of wedge for Izzy’s hip abductors because she is apparently having problems in her left hip. She tends to scissor her legs and it is causing problems. We made something tonight, but am not sure if it is going to be right.

7. Izzy needs to wear her foot stretching splints more and she hates hates hates them. I am torn between making her miserable for her feet’s sake and giving her a break because, well, anyway…

8. On to a different subject because I’m getting upset so the next thought is I hope we have school tomorrow because I really think the kids need to go to school and the roads aren’t that bad…

9. I saw about eight wrecks going to Bethany today.

10. I had a bad dream last night. It was really eerie, and I woke up for most of the night. Matt had a sermon playing so I listened to that and prayed trying to sleep. Bad cramps also kept me awake…

11. Bailey’s birthday is in a few days. He’ll be 13. I think his friend who moved to Duncan 8 months ago is staying the weekend. I hope he gets to come because Bailey has missed him and he is bringing his wii. I told them I would take them somewhere cool like laser tag or something.

12. I need to get something for Bailey to open on his birthday. His main birthday present was things to make his room a teenage room rather than a little boy room. We did that over the snow days and then ordered his letter jacket from mojo sports, but I need to get him a fun present too.

13. Matt’s family was coming this weekend, but Paula is in Omaha and Jane Ellen is in Key West so I think it is going to be on the 17th. Jane Ann’s birthday is two days before Bailey so they celebrate together and Jane Ellens is april 3. Marmar’s would have been around that time too, she would have turned 93. She was 80 years older than bailey.
